Building Update: Week 46
Much is happening…
Our dining room extension is now finished and ready to welcome guests. The bar and toilets have now been closed off to be extended so we now have ‘posh’ outside loos for a few weeks!
The photo is of Head Chef, Chris Gould, in our new kitchen which we’ll be moving into for the beginning of August.
Welcome to Graeme
We are pleased to welcome Graeme Lawrence who has joined us as Pastry Chef.
He has spent 3 years ‘down South’ most recently at the Riverside Brasserie in Maidenhead. He has also spent time at the Hinds Head in Bray and has been working with Damian Alsopp, top chocolatier and supplier of our chocolates.
He is pleased to be back in Wales having been brought up in Barry.
Chef’s Night Out, Cardiff
This is an exclusive event taking place on 4th September at Holland House in Cardiff to raise money for Ty Hafan, the family hospice for young lives in Wales.
Run along the lines of Who’s Cooking Dinner? the regular London charity event, myself and fourteen of Wales’ finest chefs will create a four-course menu per table. Guests only discover who’ll be cooking their dinner and what style of food they’ll be eating on the night and there will also be the chance to bid for a chef to cook in your own home.
I visited Ty Hafan recently with some of the other chefs who are lending their support. We went along with the organiser, David Loosemore who has a personal connection with the charity through his daughter, 4 year old Isabella. We had a tour and helped out in the kitchen to prepare lunch.
Tŷ Hafan is clearly a very special place that provides a lifeline for the families that use its facilities. It was an inspiration to see the dedication of the staff, the courage of the families and in particular the strength of the children. I am honoured to be able to show my support to this extremely worthwhile cause by taking part in this event.

Books on the Bar
‘The Gastropub Cookbook: Another Helping’ by Daily Telegraph food writer, Diana Henry. It features gastropubs from around the country and some of their recipes. The Hardwick has a dedicated section and copies can be inscribed with your personal message and signed by Stephen. On sale at £20.
‘A Taste of Merthyr Tydfil’ (£4.99). This book is the result of a community based project run by Glamorgan GATES. Recipes were contributed by Merthyr residents that they make at home and it dispels the myth that people in Merthyr live on pie and chips! It also highlights the continuing tradition of Merthyr being a place for economic migration and includes a diverse range of recipes from all over the world. The stunning photographs were taken by Toril Brancher, who worked with organizer Dr Lesley Hodgson to produce the book, and it really is a great insight into people’s homes and lives, as well as a chance to try something new.
Stephen was honoured to be asked to contribute the Foreword and particularly recommends the Corned Beef Pie recipe! All profits from the book will be donated to Cancer Aid, Methyr Tydfil.
‘Wales In Style’ (£14.99). This is a new independent visitors guide to help plan your perfect break in Wales. It includes where to stay, what to do, where to eat and where to shop. The very best of Welsh hospitality is included, featuring country pubs, plush restaurants, rustic cottages, five star hotels. The book is beautifully bound with fantastic full colour photography and contains a real treasure trove of information featuring some of Wales’ most outstanding places to stay and visit.
